Eggnog Muffins

I found this recipe for these Eggnog Muffins over at MidwestLiving and thought I would share.

Muffin Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground nutmeg
  • 2 lightly beaten eggs
  • 1 cup dairy eggnog
  • 1/2 cup butter or margarine, melted and cooled
  • 1 teaspoon vanilla
  • 1/2 teaspoon rum extract

Nutmeg-Streusel Topping Ingredients (optional)

  • 1/3 cup all-purpose flour
  • 1/3 cup sugar
  • 1/2 teaspoon ground nutmeg
  • 2 tablespoons butter


Muffin Instructions

  1. Grease twelve 2-1/2 inch muffin cups or line with paper liners; set aside.
  2. In a medium bowl, combine flour, sugar, baking powder and nutmeg. Make a well in center of flour mixture; set aside.
  3. In another bowl, combine eggs, eggnog, melted butter, vanilla and rum extract. Add egg mixture all at once to the flour mixture and stir until just moistened (batter should be lumpy).

  4. Spoon batter into prepared muffin cups, filling each two-thirds full.
  5. Bake at 375°F for 18 to 20 minutes or until golden, and a wooden toothpick inserted in centers comes out clean.

  6. Allow to cool in muffin cups on a wire rack for 5 minutes, top with Nutmeg-Streusel topping (optional), remove muffins from muffin cups and serve warm.

Nutmeg-Streusel Topping Instructions

  1. In small bowl, mix flour, sugar and nutmeg using pastry blender.

  2. Cut butter into the flour mixture until the combined mixture resembles coarse crumbs.
