Gluten-free, No Sugar Added, Banana Nut Muffins

These gluten-free, no sugar added, banana nut muffins are packed with nutty banana flavor. Just made these tonight, and if I hadn't known that they were gluten-free and no sugar added I don't think I would have honestly been able to tell!

  • 1 1/2 cups almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon coconut flour
  • 3 large mashed bananas
  • 1/2 tablespoon vinegar
  • 3/4 cup Splenda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/3 cup melted butter
  • 1/2 cup chopped walnuts


  1. Preheat oven 350°F

  2. Coat muffin tins with non stick cooking spray or coat with butter.

  3. Whisk together almond flour, baking powder, baking soda, salt and coconut flour; blend well and set aside.

  4. Mash bananas and add vinegar.

  5. Combine bananas mixture with Splenda, egg, vanilla and butter in a large bowl; blend well.

  6. Add walnuts nuts to banana mixture; blend well. (optional - use nut of your choice or opt to go nut free!)

  7. Fold banana mixture into flour mixture, and mix just until all dry ingredients are just combined. Do not over-mix!

  8. Fill muffin tins about 3/4 full.

  9. Bake in preheat 350°F oven for 15-20 minutes. Muffins will spring back when lightly  tapped or toothpick comes out clean.

  10. Remove muffins from oven and allow to cool, remove from muffin tins and serve slightly warm topped with softened butter or enjoy later!
