Strawberry Muffins with Glaze
- 1 1/2 cups all purpose flour
- 3/4 cups sugar
- 1/2 teaspoon salt
- 2 teaspoon baking powder
- 1/3 cup vegetable oil
- 1 large egg
- 1/3-1/2 cup milk
- 1 cop fresh strawberries, diced into real small pieces
- 1 cup powdered sugar
- 1-2 teaspoon milk
Preheat oven 400°F.
Grease muffin tin or spray with non-stick spray
In you mixing bowl whisk together flour, sugar, salt and baking powder; set aside.
Pour vegetable oil into a 1 cup measuring cup; add egg and enough milk to fill the cup with 1 cup liquid.
Whisk the liquid together in the measuring cups.
Add to dry ingredients and whisk until just combined. Batter will be slightly lumpy.
Fold in strawberries with spatula.
Pour batter into muffin tin.
Bake about 12-14 minutes or until toothpick stuck in middle comes out clean.
Let cool before removing from muffin tin.
In a small bowl mix the powder sugar and milk together until the lumps are gone. When muffins are cool drizzle the glaze on top.
